So this is yesterdays leftovers:

After meeting the blender that is.

We had a bit of leftover baked roots last night and instead of just re-heating them, my boyfriend did this: (again, no specific amounts, use whatever you have, mix stuff till it seems like a somewhat “solid” paddie.)

Blend leftover roots, a bit of peanuts (just because we had some and they are yummy) and a bit of pickled jalapeños. This gets kinda soggy so you add a bit of potato flakes (instant mashed potatoes) and some bread crumbs to hold it all together. After mixing that (not blending) we also mixed in a couple spoonfuls of canned corn and garlic greens from the window. Shape this “dough” into little paddies, dip in bread crumbs and fry in a bit of oil on pretty high heat. This made 15 paddies and I was full after 4. Eat them as is or with your favorite condiments. Simple, fast, nothing is going to waste and you are not eating the same thing two days in a row 🙂
